Mac & Cheeses
The best thing about boxed mac & cheese is how easy it is! So I wanted the same simplicity but without all the unhealthy ingredients, so I’ve been working on a WFPB cheese powder and it is amazing for quick dinners with almost no effort!
I’ve created 3 recipes to keep me from getting bored or stuck on eating the same meal on repeat because it’s too easy.
The first is Classical Mac & Cheese which I know and love from that blue and yellow box.
The other two are Southwest Mac with beans, tomatoes, and Southwest spices.
The last is Not-Hamburger Helper Mac. This dish recreates another boxed dinner that I loved growing up but features whole healthy lentils instead and spices of ultra-processed, artificial, and animal-based ingredients.
They all take less than 25 minutes, and you can make the powder in bulk if you like to save even more time.
Cornbread
This cornbread recipe is simple and uses whole-food ingredients: simple oats, cornmeal, apple sauce, sunflower seeds, and carbonated water for lift.
Takes about 15-20 minutes to make 8-10 portions or a 8-12 cookies.
