Dressings & Dips
From hot sauce to cheese sauce, and ranch to tzatziki. Great for salads or dipping!
Buffalo Hot Sauce
2 tbsp white vinegar
1 tbsp apple cider vinegar
¼ tsp chili flakes
ā tsp cayenne powder
1 tbsp tahini
½ tbsp paprika
¼ tsp garlic powder
ā tsp turmeric powder
2 large pitted dates (dried work better I find, but you can mince wet ones too)
water or more vinegar as needed if too thick
Add all of the hot sauce ingredients to a bowl except for the dates. Smoosh/squish/fold then dates with your fingers until they a thin flaky sheet. Then add the dates and mix everything well so there are no clumps.
Cool Avocado Ranch
2 tbsp pumpkin seeds
1 tbsp sunflower seeds
¼ tsp garlic powder
2 tbsp apple cider vinegar
2 tbsp lemon juice
1 medium size ripe avocado (~150-180grams)
¼ tsp parsley (dry or fresh)
¼ tsp dill weed
pinch of black pepper
water
Blend all the dry ingredients for the avocado cool ranch then add the avocado and other wet ingredients and mix well. Refrigerate/freeze until ready.
Cheese Powder
This is used similar to a parmesan cheese that is mixed in with other wet ingredients (for example a tomato or cheese sauce).
Ingredients
2 tbsp raw hulled pumpkin seeds (raw hulled sunflower seeds work too)
2 tbsp raw flax seeds
4 tbsp nutritional yeast
½ tbsp garlic powder
Blend all 4 items in a clean spice/coffee grinder until they resemble a powder (you could also add black pepper before blending).
Cheese Sauce
1 cup pinto/navy/butter/lima beans
(you could also use edamame or tofu if youāre not allergic)I used pinto for the quesadilla and butter beans for the nachos
0.5 tbsp tahini (omit entirely if youāre concerned or later stage CKD; other choices: 2.5 tbsp almond butter or sunflower butter etc.)
2 tbsp unfortified nutritional yeast (just omit if later stage CKD)
ā tsp mustard powder
¼ tsp turmeric powder
¼ tsp chili powder
½ tbsp garlic powder
4+ tbsp apple cider vinegar
1 cup water
(2 tbsp tapioca/cassava starch for stretch)
Wash your beans well if they are canned and add all cheese sauce ingredients to your pot and stir well on medium low heat. HINT: pre-mashing your beans will make everything much easier.
Cook and stir until the sauce thickens.
Tzatziki Sauce

2 tbsp tahini
½ dry dill
2+ tbsp minced/grated cucumber
2 tbsp lemon juice
1 tsp garlic powder and or minced garlicāI add both!
4+ tbsp water or less if your tahini is wet
1. Mix your tzatziki sauce by adding tahini and liquids first then your garlic, cucumber, and dill.
Sour Creamy Sauce
4 tbsp tahini
4 tbsp lemon juice (about 1/2 of a medium lemon) or apple cider vinegar
4 tbsp water
1/8 tbsp garlic powder
keep stirring while adding small amounts of liquid at a time until a thick sauce is formed.
Freeze (or cook then freeze) for at least 10 minutes to remove some bitterness from the tahini.
