Thank you, yes, sweet potato is definately one of my favorite ways to make a frozen ice cream dessert!

What a great workaround! I'm lactose-intolerant so I haven't been able to enjoy icecream in almost 20 years.

Does it really work with just sweet potatoes too? We have plenty of oats but rarely stock dates.

Yes, sweet potatoes, especially white, or purple flesh work well--purple is mixed with white and some cocoa powder tastes like a fudge ice cream!

Here's some other tips:

Cook white sweet potatoes with a tsp or two of lemon juice to keep them from browning.

If you want them to be more liquid when they melt (good for hot desserts) you can blend 3 tbsp of oats into a flour and add ½ cup of water and mix well with your sweet potatoes.

If you want it richer then 1 tbsp of tahini or nut or seed butter as a nice addition.

I like to add 1 tbsp red wine vinegar and then I mash in raspberries or blueberries and a touch of cinnamon 😋

Here's one more sweet potato tip that I mention a bit in the recipe tips, but if you want a great light and crunchy/crispy topping for your ice cream:

peel the sweet potatoes and remove all the potato from the skins, cover the skins in cinnamon and vanilla, then sautee/cook them in a seasoned pan until they are crispy, then crumble on-top of your sweet potato ice cream.

I just did it at first because I hate to waste anything, if I can help it, and they're so healthy, but they turned out to also be super tasty and added a really nice crispy texture.

It's definitely worth the extra 10-15 minutes.
