Thanks, as for me I am still really into bok choy right now!

I like bok choy mostly because the very tops of the leaves are like a fairly delicate lettuce variety, the middle is crisp like a hearty Romain, and the bottom half is almost like a big, but looser, Brussels sprout, and lastly, the stump is similar to a denser water chestnut! All with a hint of mustard green flavor.

They are also cruciferous veggies from the cabbage family. The same family as broccoli, kale, cauliflower, mustard, etc. and they all share the same ancient ancestor (Brassica oleracea, each selectively bred over time) and all have so many health and disease-fighting benefits!

That’s such a great breakdown of bok choy—I’ve never thought about it that way, but you’re totally right about the different textures!

For me, it’s all about sunchokes in winter. They’re so earthy and nutty, and I love roasting them until they’re caramelized and serving them with a tofu scramble. They’re also a fun twist on a root veggie!

Sunchokes are actually on my list of things I want to try this winter, but still haven't. That sounds yummy already! If you have any other tips or suggestions for sunchokes I'm all ears!
