🌱 The Recipe - Boil & Blend Taco Soup 🌮
Last week, the most votes were for a new soup recipe (vote below for next week’s recipe), so I think you’ll love this one as much as I do!
This one-pot boil-and-blend wonder combines simple (pinto) beans with juicy tomatoes, infused with a vibrant medley of spices for a deeply comforting dish that captures the essence of taco night—but it's less messy to eat and more indulgent.
Top it off with zesty guacamole, crunchy tortilla chips, shredded lettuce, pico, wfpb cheese (recipe coming soon), diced green chilies or peppers, and a drizzle of sour creamy sauce for an explosion of taco flavors.
It’s such a simple recipe that you’ll be surprised how amazing it tastes for something with so few items and so little effort!
🌱 Cornmeal Tortilla Chips - Bonus Recipe!
Since I found it impossible to locate baked tortilla chips without oil or questionable preservatives, I crafted a delightful cornmeal stovetop version that pairs perfectly with this soup!
(If anyone knows a good brand of simple tortilla chips without oil & preservatives, especially in Canada, then please let me know.)
As usual, all the ingredients are also top 8/9 allergy-free, coconut-free, SOS-Free, Whole Food Vegan, and use only common, affordable, and science-backed healthy ingredients.
